Portuguese Kale Soup

My recipes are grain free, refined sugar- free and most are dairy free. If you are new here WELCOME! I have been on this journey since October of 2017. Since going grain free I have noticed I feel better. My blood pressure is normal. I have lost weight, my family has lost weight. This is just my personal experience. There are so many preservatives in everything. So many people have allergies or health issues. Most people even kids are on medication.
Well, this is my line in the sand. I am taking back my health. On my blog, you will see that I make pretty much everything from scratch. There are very few items I can buy from the store and use. So if you are changing the way you eat. Welcome. Let’s do this lifestyle change together. My recipes are full of flavor and will leave you craving them. This is another family favorites. I have a 15-year-old son who requests this soup all the time. Serves 6
2 Tablespoons Olive oil

2 Med. Potatoes

2 Med. Onions (chopped)

4-6 Cloves of garlic

2 bay leaves

1 lb Kale

1 15 oz can garbanzo beans (you can use dry beans just soak garbanzo beans overnight about 1 cup)

1 can diced tomatoes (about 1 cup fresh chopped tomatoes)

1 lb linguica (hickory smoked Portuguese sausage or Chourico)

1-quart chicken broth or homemade chicken broth

 

Heat oil in pot add onions, garlic, and potatoes and sausage cook about 5 min.  Add remaining ingredients except for the kale and bring to a boil.  Reduce and cook until potatoes are tender.  Add chopped kale cutting out the ribs that are thick and hard. Cook about 10 more minutes.
