Winter Vegetables

My recipes are grain free, refined sugar-free, and most are dairy free. My diet has changed in the hopes of creating a more healthy me. My health has been deteriorating. I have several autoimmune illnesses including Hashimoto’s thyroid disease. I am tired of seeing doctors and them putting me on a medication for this and a medication for that. I went to see a functional doctor. I won’t lie, it was expensive as insurance does not cover functional doctors. My Western doctors have seen a change in my blood work and other tests and have removed me from some of the medications I was on.

I know many kids don’t like vegetables. But mine have always loved them. I will admit I use to think they were going to be vegetarians. This is probably my favorite dish to make in cold weather. I love the variety and flavor of all these vegetables together. If you have not had roasted vegetables you need to. They mellow and their taste is so yummy.

1 cups radishes

1 cups turnips

1 cup rutabagas

1 cup parsnips

1 cup beets

1/2 cup celery root

1 cup carrots

1/4 cup leeks

Use your favorite spice mix: BBQ, Asian, or Steak seasonings. It’s a very flexible recipe as you can mix the recipe up add more vegetables or subtract some. Other options are any kind of potatoes, squash, celery, sweet potatoes. Serves 6

Bake at 400 for 45 mins.
