Chimi Roccan Chicken


My recipes are grain free, refined sugar free and most are dairy free. I went grain free, refined sugar free to improve my health.  My health has actually improved. I have more energy and I don’t have the aches and pains I used to have. Why the name? Well, this recipe has my recipe of Chimichuri sauce and Moroccan chili sauce it. Chimichuri originated in Argentina. So I thought it needed to pay homage to those two countries. Hence the name Chimi Roccan Chicken. What to do with leftover sauces? I don’t like to waste.  You create a recipe to use them up. I came up with this recipe a couple of years ago because I had leftover sauces.


4 chicken breasts

1 1/2 cup Moroccan Chili Sauce

1/4 -1/2 cup Chimichuri Sauce

1/2 cup chicken broth

1/2 cup chopped onion

1/2 teaspoon salt

1/8 teaspoon pepper


Cut up chicken and onion. Salt and pepper the chicken. Fry up chicken and onion in a frying pan on medium heat. Once cooked add remaining ingredients. Cook until heated through. Is good with cauliflower rice or cauliflower mash. Serves 4 -6
