My recipes are grain free, refined sugar free and most are dairy free. Welcome to my blog. I am always trying to create new and flavorful recipes. I really like the taste of balsamic vinegar. It is my vinegar of choice. This is an old recipe that I revamped a little. Use with Keto Orange Marmalade. This food not only tastes good but there are no preservatives or colorings. I don’t have a professional camera just the one that is on my phone. The food is really as good as it looks.
4 chicken breast
1/2 cup balsamic vinegar
1/2 cup keto orange marmalade
1/4 teaspoon pepper
1 teaspoon salt
1/4 teaspoon rosemary
2 cup chicken broth
Preheat oven to 375. Combine balsamic vinegar and marmalade into a pot. Reduce to one half. Remove and let cool. Combine vinegar mixture with spices, and chicken broth. Oil a deep covered baking dish so that it is easier to clean up. Place chicken breast into a deep covered baking dish. Place in oven and cook 35 to 40 minutes. Remove and place chicken on dinner plates. Spoon 2-3 tablespoons over the chicken. Or make a gravy.
To make a gravy: add three tablespoons tapioca flour to 3 tablespoons water to make a slurry. Pour the juice into a pan and heat. Stirring constantly pour in the slurry until thick. Makes 4 servings. One chicken breast per serving.
You can eat with or without a gravy.
