Keto Grain Free Breakfast Burrito

My recipes are grain free, refined sugar free and most are dairy free.  I can’t tell you how excited I was to find Siente tortillas and tortilla chips. So excited to add some Mexican dishes to my repertoire. I haven’t had a breakfast burrito for the longest time. I was so happy that I could finally make myself this burrito. This recipe serves one. I found several different Siente tortillas as my local health food store. These tortillas are the bomb. Are they pricey? Yes, yes they are. But they are so tasty. My family still eats regular flour tortillas. I only purchase these tortillas for myself. I make their breakfast burritos the same way except with a flour tortilla.

1  Siete almond tortilla

1 slice of bacon

1 scrambled egg

2 teaspoons of chopped onions

2 tablespoons of chopped bell peppers

1 tablespoon shredded cheddar cheese

2 chopped cherry tomatoes

1 tablespoon Pace salsa or homemade


Fry bacon in a pan on the stove. Remove from heat. Remove most of the bacon oil. Fry up onions and bell pepper in leftover bacon grease. When they are cooked through add the egg and scramble. Add cheese on top of the cooked egg. Add the tortilla to the pan and lightly heat it on both sides. Add the bacon and egg mixture into the tortilla. Remove from heat. Add salsa of your choice. Roll up and serve.
