Keto Poultry Brine

My recipes are grain free, refined sugar free and most are dairy free.  I often feel like chicken doesn’t have enough flavor and could use a little boost. Therefore I often brine my chicken the night before cooking or barbecuing. This is a simple brine. Separate the skin from the chicken so that the brine can reach the meat better. Occasionally I use a small cocktail fork to prick the meat of the chicken under the skin. This recipe goes well with Keto Smoked Paprika Rub and Chicken on the can.

 

Ingredients

3/4 cup salt

1/4 coconut sugar

1 tablespoons peppercorns

1 bay leaf

3 sprigs of thyme

3 smashed garlic cloves

zest of half a lemon

lemon juice of half a lemon

3 cups water

Place all ingredients into a pan and bring to a boil. Reduce heat and cook until salt has dissolved. Allow to cool. Pour into jars and store or into a 2 gallon plastic bag. Put whole poultry or poultry pieces into the plastic bag with brine and seal. Place bag into a bowl to protect your fridge from any leakage. Place bowl with chicken and brine into the fridge.   Brine poultry a minimum of 8 hours or overnight.
