My recipes are grain free, refined sugar free and most are dairy free. So many choices so many different recipes on how to make chicken. What recipe to do? Many Americans Barbeque chicken on a soda or beer can. They place the can in the butt end of the chicken so that the bird sits upright and the juices run from the top to the bottom of the bird. The flavor of this chicken is out of the world. I use my Smoked Paprika Rub for this recipe. So simple, easy and delicious. I often brine the chicken the day before adding more flavor to the chicken. Use my Keto Poultry Brine goes well with American Baked Bean, Dairy Free Coleslaw.
Summer is on its way. Which means a lot of people will be Barbequeing. I Barbeque so that my oven doesn’t heat up an already hot house. We have a Traeger BBQ Grill which imparts so much flavor to the chicken. It is a smoker and a grill.
Here is a copy of my Keto Paprika Poultry Rub
2 tablespoons smoked paprika
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons paprika
1 teaspoon salt
1/2 teaspoon pepper
You will not need to use the all of the rub. Using your fingers gently separate the skin of the chicken from the meat. Pour a good amount of the rub in the palm of your hand and place the rub all over under the skin front and back. Once you have rubbed it under the skin put more rub into your palm and rub all over the outside of the chicken front and back. Clean out an empty used soda or beer can (for example a Coke can). Then place the can inside the bottom or the butt of the chicken stand the chicken upright. Place chicken on your grill. Grill approximately 1 hour 15 minutes to 1 hour 30 minutes. Remove from grill and allow to cool.
