My recipes are grain free, refined sugar free and most are dairy free. So many recipes require mayonnaise, buttermilk, and sour cream. So I am always trying to think outside of the box. Once I remembered how to make buttermilk from almost any milk, I thought I could basically do the same thing for sour cream. So with this recipe, you will want to make it thicker than the buttermilk. I use this in Salad dressings and dips. This recipe is so easy. Use with my Keto French Onion Dip. Use to make a crema. If making a crema use pungent spices to overcome the coconut and the sweet flavor. For example mince garlic and cumin.
Ingredients
1/4 cup of a can Coconut milk
2 teaspoons fresh lemon juice
Directions
Open up a can of coconut milk. Remove about 3 tablespoons of the thick coconut milk into a bowl. Pour in a little of the coconut water. If too thin add more of the thick coconut milk. If too thick add some of the coconut water. Whip together until it resembles the thickness of coconut milk. Add lemon juice to the thick coconut milk. Wait 10 minutes. If using as sour cream for something savory you will need to add spices and some salt to remove the sweet flavor.
