Nevada Broccoli Beef

My recipes are grain free, refined sugar free and most are dairy free. Trying to come up with something for dinner that is grain free and refined sugar free is really hard sometimes. Sometimes a thought just comes to my mind. Other times it just comes together as I am cooking. This is one of them that came together as I was making it. Most Chinese food that is in the USA is American Chinese not authentic Chinese. This is my idea of American Chinese. I had all of these ingredients on hand and this is the recipe I came up with. I have Indian Black salt in my pantry and thought this was a good time to use it. It has a very different taste than regular salt. I use Coconut Aminos as a substitute for soy sauce. Keto Nevada Sauce is my own recipe that I use to substitute Worcestershire sauce. Feel free to substitute more beef broth for the white wine.

You can fry this in a frying pan or a wok. I have an electric wok. I feel like you use less oil when you cook in a wok. I sometimes use a mix of sesame oil and avocado oil.

Ingredients

1 1/2 lbs stew meat

1 cup chopped bell peppers

1 cup chopped onion

1/2 cup chopped broccoli with chopped stem

1/2 cup sugar snap peas

1/2 teaspoon ginger

1/2 cup beef broth

1/2 cup white wine of your choice or add more beef broth

2 tablespoons Keto Nevada Sauce

2 tablespoons coconut aminos

2 tablespoons Harrisa

1 teaspoon black salt

1/4 teaspoon pink salt

1/2 teaspoon powdered garlic

1/2 teaspoon pepper

1/2 teaspoon dijon mustard

2 tablespoons tapioca flour

1 tablespoon water

2 tablespoons avocado oil

1 teaspoon sesame oil

 

Directions

Cut up the stew meat into bite size pieces. Cut up bell peppers, onions, broccoli, and sugar snap peas into bite size pieces. Place 1-2 teaspoons of Avocado oil into a wok. Fry up the onions, sugar snap peas and bell peppers remove from wok and place into a bowl. Then fry up the broccoli to your liking remove and place into the veggie bowl (onions etc.). Next fry up the beef to your liking, remove and place with the veggies.

Before making the Stir fry sauce grate the ginger using a microplane into a bowl. To make the stir fry sauce combine beef broth, white wine, Keto Nevada Sauce, coconut aminos, Harissa, black salt, pink salt, garlic powder, pepper and dijon mix together thoroughly. Heat up the Stir Fry sauce in the wok until it is hot. In a small cup combine water and tapioca flour. This will make a slurry. Pour the slurry through a sieve into the stir fry sauce while stirring. Once the sauce thickens return the meat and veggies to the wok and heated sauce. Once the meat and veggies are heated through serve with cauliflower rice or cauliflower mash. If you eat rice that is also another way to eat it.
