Roasted Strawberry Jam

Strawberry JamMy recipes are grain free, refined sugar free, and most are dairy free. I like grain free crackers and jam as a quick snack sometimes. Which means I have to make crackers and jam or purchase grain-free crackers. Check out my recipe for Grain-Free Garlic Crackers and look for variations. This jam uses balsamic vinegar to up the strawberry flavor. I know it sounds odd but it really works. This jam will be unique and super tasty. Use as a topping for pancakes, waffles, french toast or Keto Soft Serve Vanilla Ice Cream. You will first need to roast the strawberries before you can make the jam. Ingredients for Roasted Strawberries

2 cups strawberries

2 tablespoon balsamic

2 tablespoons monk fruit sugar

Preheat oven to 350 F. Place chopped strawberries on an oven proof baking pan with sides. Sprinkle vinegar and monk fruit over strawberries. Put strawberries in a preheated oven for 25 minutes. Allow to cool. Once they are cooled put into a food processor and pulse 3-4 times. Careful not to liquify strawberries. Put through a sieve or a chinois. Next, follow the directions below to make jam.

Ingredients for Jam

Roughly 1 3/4 cup roasted strawberries that have gone through the sieve

1/4 water

1/8 cup coconut sugar

1/8 cup maple syrup

Add roasted strawberries, water, coconut sugar and maple syrup to a pan. Bring to a boil and cook for 10 – 20 minutes or until desired consistency. Makes roughly a little over 1 cup. Allow to cool. Pour into a sterilized glass container and store in the refrigerator for up to one month.

  2. I’ve never made homemade jam, but this looks pretty simple to make. It also looks delicious. I love that you use coconut and monk fruit sugar…definitely a must try recipe.
