Mediterranean Lemon Chicken Soup

My recipes are grain free, refined sugar free and most are dairy free. What to make on a cold, rainy summer day? Why soup of course. Some days I am scratching my head for ideas on what to make for dinner. This one just seemed to take shape in my head. I have Zahtar seasoning in my pantry so why not use that. I was I’ll add this, then this oh what about this. I saw the Zahtar and thought this will go nicely. Sometimes I don’t get a recipe because I just add this then that and taste. This is a very mild and tasty soup. What is Zahtar? It is Thyme, Sesame seeds, and Sumac. Sumac has a lemony flavor. I like to use Zahtar in Mediterranean Foods.

I made this soup in my crockpot (what most people refer to today as a slow cooker). I put it on high for three hours then set it to warm. I put the chicken breast in raw and let it cook for over an hour. Then I pulled it out and shredded it with two forks. Easy Peasy. I think when I make it again I will add shredded carrots.

The inner stalks of celery often have leaf’s on them. I like to use the celery leaf from the celery in my soup and other dishes. So if you have celery with leaf on it don’t cut it off. Mince up the leaf and add it to your soup.

 

3 chicken breasts

2 cans white beans

2 cups water

6 cups chicken broth

2 tablespoons Zahtar seasoning

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon oregano

2 cloves of minced garlic

1 onion

1 cup celery

*  2 tablespoon celery leaf (if you have it) Optional

1/2 teaspoon parsley

Juice of 1/2 a lemon

1 teaspoon lemon zest

2 teaspoons avocado oil (oil inside of slow cooker)

 

I oil the inside of my slow cooker to make it easier to clean out. Place your chicken inside the stone dish. Drain your cans of beans and place in slow cooker. Add chicken broth, water Zahtar, salt, pepper and minced garlic. Cut off the leaf’s from the inner stalks of the celery. Mince the celery leaves and add to soup. Chop onion and celery and add to soup. Add the parsley, lemon juice and lemon zest. Place lid on slow cooker and set to cook for 4 hours. Remove chicken and shred with forks. Replace chicken. Allow to cool and serve.
