Caramel Pecan Soft Serve Ice Cream

My recipes are grain free, refined sugar free and most are dairy free. When I first started this lifestyle change I felt I was doomed to a bland diet. I have always loved cooking and baking. Then I started researching and trying this and that. I finally came up with what works for me. I can find ice cream made with almond milk, coconut milk but they all have is refined sugar plus they are pricey. This means I have to make it from scratch. Everything tastes better when made from scratch.

I have been craving ice cream so it was back to the drawing board to write a recipe. Two ice creams came to mind Pistachio or a caramel pecan. My husband said pecan sounded good. I first had to decide on the sweetener. I thought maple syrup probably makes a wonderful caramel. How do you make caramel? You put sugar inside a pan and melt it. So after those choices were made I wrote this recipe and made the wonderful ice cream.

The caramel, chopping and roasting the pecans take about 15 – 20 minutes. My machine makes ice cream from the start to finish in 25 minutes. I hope you like this ice cream as much as my family.

*Notes: This ice cream makes about 5 small servings. The Nutritional Facts are based on coconut oil and not butter. I don’t care for the texture of this ice cream once it has been frozen solid. Nutritional facts are listed below the pictures.

1/2 cup pecans

1/2 cup maple syrup

1 teaspoon vanilla extract

2 tablespoons coconut oil or butter

1 can coconut milk

Measure out the pecans and chop them. Add chop pecans to a pot and cook over medium heat until they are toasted 3-4 minutes. Cooking until you can smell the pecans and they are fragrant. Remove from heat. Pour maple syrup into a small pot with plenty of room on medium heat. Frequently stir while on the heat. Bring to a boil but do not allow to boil over. Cook, until it begins to carmalize and has begun to thicken. Approximately 5-8 minutes. Remove from heat and add coconut oil or butter. Once butter has melted add the pecans. Open can of coconut milk and blend or whish the coconut milk together with the caramel sauce. Once blended pour ingredients into the bowl of your ice cream maker and follow the manufacturer’s directions for making ice cream. When finished use an ice cream scoop and scoop out soft serve ice cream. If you want you can freeze for about 15 minutes or so and it will be a little thicker.
