Smokey Mushroom Gravy

My recipes are grain free, refined sugar free and most are dairy free. I began my journey of revamping my diet under the supervision of a medical doctor. Western medicine just wasn’t working for me. I kept being put on more medication. I was feeling worse and worse not getting better. It’s bad enough to have Hashimoto’s thyroid disease without having a bunch of other autoimmune illnesses. Since beginning this journey I am feeling better and having more energy.

I have been making my own recipes since I met my now husband. It is my family that has encouraged me to write my recipes down. I used to just throw this together with that. Sometimes I could recreate it sometimes I couldn’t. It was my husband who would ask did you write this one down. I have recipes that I use to use that I have revamped and recipes that I can still use. I always worry that one-day inspiration for new recipes will vanish. But they seem to keep coming.

It was my friends though who encouraged me to write a blog or a place where I would share my recipes. Two friends, in particular, Michael and Mike. I won’t give their last names but they know who they are. I had another friend who told me I should have started a recipe blog about 15 years ago. I am blessed by good friends.

This recipe is one of the first recipes I wrote after beginning my new dietary journey. I love mushrooms. I hope you like it as much as we do.

Mushroom Gravy

2 teaspoons avocado oil

1 cup sliced onions

1/2 cup sliced mushrooms

3 -6 cups chicken broth (homemade or store-bought)

1 teaspoon Nevada Sauce

1/4 teaspoon smoked paprika

1/2 teaspoon balsamic vinegar

1/2 teaspoon liquid hickory smoke

1 teaspoon coconut aminos

1/2 teaspoon pink salt

2 tablespoons tapioca flour

5 tablespoons water

 

Heat avocado oil on medium heat in the frying pan you fried up the Smokey Garlic Patties. Allow oil and pan to get hot. Fry up sliced onions and mushrooms until golden brown. Add chicken broth to the cooked onions and mushrooms. Add Nevada Sauce, Paprika, balsamic vinegar, liquid hickory smoke, coconut aminos, and pink salt. Stir until well combined. Take a spoon and taste gravy if it needs salt or pepper adjust. Place tapioca into a cup and add cold water. Stir to make a slurry. Once the slurry is made pour and stir while pouring into the chicken broth mixture. Continue stirring until thickened. If you have placed Smokey Garlic Patties into the oven remove and place them into the gravy. Once they have been covered in gravy turn the heat off and serve. Serve with mashed potatoes, riced cauliflower, or rice.
