Chocolate Mint Soft Serve Ice Cream

My recipes are grain free, refined sugar free and most are dairy free. My diet has been revamped to help improve my health. Many of my recipes are good for those following AIP, Paleo, Keto or those who have allergies. I was encouraged by my friends to start this blog to help others who follow the same dietary diet. I have noticed a huge increase in energy levels since I switched my diet. So much so that I have been able to go back to the gym. I am going to the gym 5 days a week now. Some of the classes are aerobics in the pool and some are pool pilates class. It’s nice because one of my best friends goes with me. Another best friend takes walks with me on Sunday’s. I can’t tell you what it means to me to have all this encouragement as well as the energy to do it.

I was looking to make something quick and easy for dessert. It’s summertime so that means many people are making ice cream. Love ice cream and the luscious taste on those taste buds. My daughter’s favorite ice cream is mint chocolate chip. I have yet to find chocolate chips that don’t have refined sugar in them that I feel is worth the price. So why not make the ice cream without the chocolate chips. Especially since most ice creams, I make take less than thirty minutes from start to finish to make. So I set about to create a luscious and creamy soft serve ice cream. This is so yummy and tasty. I found cocoa flavoring in my cabinet. I thought why not use it. So that’s how this recipe came together.

 

1 can of full-fat coconut milk

1/3 cup of pure maple syrup

3/4 teaspoon peppermint

1 teaspoon Cocoa flavoring

1 tablespoon Cocoa powder

Open can of coconut milk. I pour my coconut milk into my 2 cup measuring cup. Using a whisk together the thick coconut milk with the coconut water. Add the maple syrup. peppermint, cocoa flavoring, and cocoa powder. Whisk all the ingredients together are well blended and smooth. Pour into ice cream maker and follow the manufacturers instructions. When done you will have soft serve ice cream. Approximately 5 servings of 4 oz each.
