Tri-Citrus Pork Chops

My recipes are grain free, refined sugar free and most are dairy free. If you are here due to allergies or because you too are grain free Welcome. I have always loved cooking and baking. I love writing recipes but I have not always written recipes. I do prefer fresh from scratch food. I now make my own ketchup, bbq sauce, mayo and other condiments. I don’t mind eating frozen meats. My dad was a butcher when I was very young. So we tended to have a freezer full of meat. I used to go in with a friend and buy half a beef. We would each get a 1/4 of the front and 1/4 of the back end. Which meant you got a little of the whole cow. Then I would also get 1/2 a hog and a bunch of chickens. But meat has gone up so much that I don’t do this any more. I try to stock up when meats are on sale.

I had a friend ask recently why I didn’t have any pork recipes on my blog. I explained that my family eats mostly chicken. I told her that I would post a pork recipe soon.  I do purchase meat and freeze it. I normally have chicken breasts, ground turkey, and occasionally pork chops. I used to make a wonderful recipe from Betty Crocker cookbook new and revised by Golden Press/New York second printing 1987. The recipe was called Easy Lemon Pork Chops. The Betty Crocker recipe inspired me to make this one. This is one of the of those recipes you will make again and again.

These pork chops are pretty and so tasty. You can eat the slices of orange, lemon, and lime. It is really nice when you push down on the center of the citrus and juices spill out. Be sure to press on the slices and dip your pork chops into the liquid.

I put tin foil down over my pan as it makes for easier cleanup. Or put these pork chops on a pan on the grill. This recipe contains one of my favorite pictures. The picture of the sliced orange, lemon and lime just makes me happy. I love pictures of food. Hope you enjoy the photos and the recipe.

4 pork chops

4 onion slices

4 orange slices

4 lemon slices

4 lime slices

2 teaspoons Garlicky Onion Seasoning

5 tablespoons Hickory BBQ Sauce

3 tablespoon coconut sugar

salt and pepper

Preheat oven to 350 F or prep your BBQ. Salt and pepper both sides of your pork chops. Sprinkle approximately 1/4 teaspoon of Garlicky Onion Seasoning per each side of the pork chop. Next cut your slices of onion, orange, lemon, and lime. Place your pork chops inside a baking dish. Place an onion slice on each pork chop followed by a lemon slice and lastly a lime slice. Next, combine your Hickory BBQ sauce with coconut sugar let sit for approximately 5 minutes. Top each lime with 1 tablespoon of Hickory BBQ sauce mixture. Take a piece of tin foil and fold in the center. Open tin foil and use it to tent your pork chops. Bake 35 minutes. After 35 minutes remove tin foil. If possible use a spoon and spoon some of the liquid over the tops of the lime. Place uncovered pork chops back into the oven for 45 minutes or until cooked all the way through. Feel free to use a digital oven thermometer. Remove from oven allow to cool 10 minutes. Serve with Cauliflower Rice Pilaf, Turnip Mash, Carrot and Turnip Mash, Winter Vegetables, fried cabbage, or Cinnamon Apples, Cinnamon Pears, BBQ, Balsamic Brussel Sprouts, or serve with a spinach salad and Maple Mustard Dressing or maybe make an Apple Pie filling and grain free pie crust for dessert.
