My recipes are grain free, refined sugar free, and most are dairy free. I think that many people feel that AIP, Paleo, Keto, Whole 30 or Gaps are bland and don’t have any tasty foods. I think they would be wrong. Same goes for countries. If you don’t think you would like Russian food then maybe you haven’t had the right dish or made by a great chef. I believe every country in the world will have something you absolutely love and probably things you won’t like. I am not a vegan but eat vegan dishes all the time. These diets were created for people with health issues. Will going grain free, refined sugar free and limiting your dairy help you? I don’t know. I believe we are all different. All I do know is that it works for me. I also don’t eat hydrogenated oils or nitrates. I only use coconut oil, avocado oil, grapeseed oil or butter. I am not eating anything with peanuts or currently potatoes. This is my only cheat I occasionally have potatoes. I am under the supervision of a Functional doctor who has me on supplements. I have lost weight, have more energy, and my blood results have improved.
My hands and feet used to fall asleep while I was walking or working out. I only get this occasionally now. I think prior to going on this diet for lack of a better word I had an ongoing headache for over 2 years. I still get headaches from time to time but not like it used to be.
I am always trying to come up with new recipes. I guess this is similar to Hawaiian chicken. There are so many things I can not eat. There are very few restaurants that I can eat out. We have a couple of Hawaiian restaurants locally. The food is really good. But I know there is lots of refined sugar in it and other things I can’t have. I am sure there are other items in the food that I can’t have. Therefore I wanted to create a recipe similar to Hawaiian BBQ Chicken
It is hard to put nutritional facts for this recipe as the majority of the marinade is discarded. You can also just make the marinade and store in your fridge for up to one month and use as needed.
Make with Bacon Bok Choy
1 cup fresh or canned pineapple juice
1/2 cup maple sugar
3/4 cup coconut aminos garlic sauce
1 teaspoon salt
Combine the ingredients. Reserve 1/2 cup of marinade and place in a container with a lid and place in the fridge. Pour remaining marinade over chicken. Let marinate overnight. Remove chicken from the fridge and allow to come to room temperature. Place chicken on a beer or soda can. Place the can in the rear of the chicken and stand chicken up. Place on BBQ and cook on high. Take reserved marinade and pour approximately 1/8 cup over the chicken. After 30 minutes pour another 1/8 of a cup over the chicken making sure some gets into the center of the chicken. Use the remaining marinade in other dishes or with Bacon Bok Choy. BBQ an 1 to an 1 1/4 hour. It will be dark in color but it’s not burnt it is the sugar that has darkened the skin.
