Scallion Medallion

My recipes are grain free, refined sugar free and most are dairy free. I know there is a lot of discussions about AIP, Keto, Paleo etc. Many people don’t believe there is anything to them. I think different things work for different people. We don’t all have the same chemical make up some are high in iron for instance while other’s are low in iron. All I can say is that switching my diet is one of the best things I have ever done for myself. Why? Because I have more energy and actually feel better. There was a time we would go grocery shopping etc. and I couldn’t stand up the whole time I would have to go sit down. Now I go shopping by myself and I am even back at the gym. I am currently only doing water classes at my gym but it’s a start.

Perhaps you have revamped your diet to improve your health or you have allergies and don’t have a choice in the matter. I have been going to a local Farmers Market to get fresh produce once a week. I love seeing and tasting the various farm produce. I bought these scallions from there and wanted to make something with them. On the way home I stopped at a little mom and pop Mexican butcher, grocery and sandwich shop. I love mom and pop stores as I believe they are the backbone of our country. They had flank steak and as soon as I saw the steaks most of this recipe came into my mind.

What a wonderful aroma smelled in my kitchen.

2 lbs Flank Steak

1/4 cup teriyaki coconut aminos

2 tablespoon coconut aminos

1/4 teaspoon ginger

1 teaspoon salt

1 tablespoon homemade Mouthwatering Orange Marmalade

1 tablespoon Homemade Coconut Brown Sugar

1 garlic clove minced

12 stalks asparagus

4 green onions

16 sugar snap pea pods


Preheat 425. Trim veggies. Parboil the veggies. Mix together the Teriyaki sauce, coconut amino’s, fresh ginger, salt, marmalade, coconut brown sugar, and minced garlic clove. Blend the sauce together. Add the steaks to the marinade and let marinate for 1 hour. Take your oven-safe pan and wrap in tin foil for easier cleanup. Lay your steaks flat add 3 asparagus, 4 sugar snap peas and one green onion inside each steak and roll up. Lay the seam down. If it won’t stay together add a toothpick. Place inside oven and bake 8 – 12 minutes or BBQ about 4 – 8 minutes. Remove from oven allow to cool for 5 minutes. Place steak on a plate with a tablespoon or so of the juices from the pan. Can serve with homemade salsa and a little cilantro.

    Another mouthwatering dish, you are fantastic. America need to learn from you how to eat right, feeling much better and maybe loosing weight at the same time. You need to have your own show on TV.
