Strawberry Glaze

My recipes are grain free, refined sugar free and most are dairy free. Welcome to my blog. Changing my diet has helped to improve my health. If you feel exhausted beyond belief to the point you don’t know how you are going to make it through your day then changing your diet may help you too. I am feeling better, gaining energy all the time and my medical labs are improving.

It is summertime!! I love strawberries and they are prolific in the summer. I recently went to my local Farmer’s Market and found the most delicious strawberries. So sweet and deep dark red. They reminded me of the wild strawberries they have in Sweden in the forests. However, the wild strawberries in Sweden are smaller than the ones I purchased at the Farmers Market. For whatever reason our  local Farmers Market

We used to go to a local restaurant and get Fresh Strawberry Pie. They went out of business years ago. Which means that I needed to create my own recipe for Fresh Strawberry Pie. This is such a wonderful and delightful treat for anyone and this is an American version. This glaze is used in my Fresh Strawberry Pie.

 

1/2 cup maple sugar

3 tablespoon tapioca flour

1 cup strawberries

1 teaspoon balsamic vinegar

3/8 cup water plus 1/8

*1 teaspoon strawberry extract

 

Combine maple sugar and tapioca flour in a medium-sized pan. Stir until thoroughly combined. Add cold water, balsamic vinegar, strawberries, and if you want optional strawberry extract or strawberry liquor to the flour mixture. Add pan to the stove and turn to medium heat. Bring to a boil while stirring. Once the berries have softened use a potato masher and mash strawberries. if too thick add remaining 1/8 cup of water. Cook until desired thickness and stickiness. Remove from the heat and allow to cool.
