Tarragon and Herb Salad Dressing

My recipes are grain free, refined sugar free and many are dairy free. A lot of people ask me if I have an allergy to grains. I am not sure how to answer that question. You see I have a slew of autoimmune illnesses such as Hashimoto’s Thyroiditis, Fibromyalgia, Chronic Urticaria (Hives) to name just a few. They use to make me tired beyond belief. It took years to get diagnosed and then years of being on medications. Pretty soon it was more and more medications. It felt like I was on a conveyor belt. Because we did this now we have to do that. Now you are on this medication you now need to take this medication. I was not getting better or feeling less tired just getting sicker and sicker with more medication and still gaining weight. The crazy thing is I was hardly eating as I wasn’t hungry and food didn’t seem to taste good. I have a really good friend (who also has Hashimoto’s and her daughter has diabetes) who saw a Facebook ad for a free seminar a Functional Health Doctor in our town was having. We signed up to go and check out the information.

The seminar resonated with me. I soon became a patient of the Functional doctor. I was put on a strict diet and nutritional supplements. In the beginning, I felt like I was doomed to live a life of cardboard tasting food. I mean have you tried some of the grain free stuff on store shelves? They are often in beautiful packaging. I would get so hopeful about the taste and flavor before I opened it. Then you would taste it. It was worse than cardboard. Somethings you wanted to scrub even the memory of it from your brain. You want to untaste it. It was frustrating spending a lot of money to get something that tasted horrible.

I thought I might as well try to make it from scratch. I couldn’t do worse, whatever I did would be an improvement. Now I make almost everything I eat from scratch. When my family does go out to eat I bring my own salad dressings and often condiments. I have a favorite steakhouse we go to and I bring this to put on my salad.

 

1/2 cup homemade mayonnaise

1/2 cup Keto coconut sour cream or sour cream

1/2 teaspoon Tarragon

1 teaspoon dill

1 teaspoon chervil

1/8 teaspoon celery seed

1/2 teaspoon parsley

1/4 teaspoon salt

1/2 teaspoon white wine vinegar

1 tablespoon fresh lemon juice

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/8 paprika

pinch of cayenne

 

Combine the mayo and coconut sour cream. Add all the remaining ingredients and blend well. Store in fridge for two hours. After two hours serve. Keep in fridge approximately 2 weeks. Makes 1 cup of salad dressing or dip.
