Chicken Thighs with Homemade Plum Sauce

My recipes are grain free, refined sugar free, and most are dairy free. If this is your first visit to my blog? WELCOME! I have revamped my diet in order to create a healthier me. So far it is working. I used to be exhausted all the time. I could wake up and still feel I needed more than just sleep. It is this dragging feeling where you are not really experiencing life but just going through the motions. If you feel like this I am sorry. It is miserable. I hope that you will be able to find renewed energy as well. The revamp of my diet has given me back my energy. This is just my personal experience with this diet change.

I used to have plum sauce in my pantry. But not anymore as it contains many items I can’t have. This is my version of a Japanese Plum Sauce. I recently went to a local Farmer’s Market and purchased beautiful and tasty plums. I bought yellow plums and purple plums. The yellow plums I ate as they were super tasty. The purple plums I brought home and made a plum jam with them.

This is a savory plum sauce and gives this dish an Asian taste. Make this with Fried Cabbage.

Nutritional Facts are based on 8 servings one serving per chicken thigh.

6 – 8 chicken thighs

1/2 cup homemade Plum Preserves

1 tablespoon Nevada Sauce

1 tablespoon Tamarind

1 Tablespoon Balsamic vinegar

*2 teaspoons Sherry (optional)

1/8 teaspoon fresh ginger

1/8 cup Teriyaki Sauce coconut aminos

1 tablespoon Garlicky Onion Seasoning

1/4 teaspoon Red Pepper

1 clove minced garlic

1/8 sesame oil

salt and pepper

1 tablespoon of avocado oil

Preheat oven to 350 F. Oil a covered oven dish. In a bowl combine plum jam, Nevada Sauce, Tamarind, Balsamic vinegar, fresh ginger, Teriyaki sauce, Garlicky onion seasoning, Red Pepper, minced garlic, and oil. Stir thoroughly until well combined. Set plum sauce aside. Salt and pepper both sides of chicken thighs. Place avocado oil in a pan on medium heat. When the pan is hot add chicken thighs skin down and fry until the skin is crispy. Once the skin is crispy turn chicken over and sear chicken until it is lightly brown. Place chicken inside greased covered oven dish and pour plum sauce on top. Place cover on chicken and place in the oven. Cook for 30 – 45 minutes. Remove from oven and let sit 15 to 20 minutes to cool. Remove top of the ovenproof dish and place chicken on plates. Using a spoon scoop some of the juices from the dish and place on top of each chicken thighs. When eating dip your chicken in the juices that are on the plate.

    1. Plums are very versatile. Plus there are so many varieties and now with plumcots such a wide variety of colors and flavors. My husband’s grandmother who was in her hundreds (20 years ago) use to make lots of things with plums. She has since passed. It’s always good to chat with you, my friend. Thanks so much for your kind words and for stopping by! May your day/night be wonderful and blessed!
