It seems like some days it’s a struggle to come up with something new for dinner. Some days nothing seems to click and I just want to revert to pulling out one of my homemade cassava pizza crusts and having pizza. Other days inspiration comes from above and an idea takes place hours before it’s time to make dinner. I had this vision of having a cream cheese chicken dinner. You can eat this over Cauliflower rice and a side vegetable or leave out the sugar snap peas and make Dinner savory crepes for dinner.
The crepe idea came the following day. Which was perfect because I had leftovers. But what a makeover for leftovers. Heat up your leftover Creamy Chicken and then make your crepes. The crepes and the cream cheese chicken made such a decadent dinner.
If you decide to make these into crepes simply add a couple of tablespoons to each crepe and top with a little sour cream, or salsa and cilantro or parsley to decorate. Cream Cheese Chicken
- 4 chicken breast (4 lbs)
- 2 cups chicken broth
- 2 teaspoons salt
- 2 Tablespoon dried vegetables for soup
- 1/4 cup shredded carrot
- 1/2 t powdered garlic
- 1 1/2 teaspoons onion powder
- 3/4 teaspoons pepper
- 1 teaspoon poppy seeds
- 3 tablespoons chopped onion
- 1 whole leek both green and white parts
- 2 teaspoons Nevada Sauce
- 1 1/2 teaspoon Garlicky Onion Seasoning
- 1 cup cream cheese
- 1 cup sugar snap peas
Prep your slow cooker by oiling the inside bowl this will make for easier clean up later. Place chicken breast inside the slow cooker. Cut up leek in lengthwise and then rinse under running water to clean out the door. Finish chopping up the leeks. Add remaining ingredients and cook for 3 – 4 hours.
Cream Cheese Chicken Crepes
Make 1 or 2 recipes dinner or dessert crepes
add 2 – 3 tablespoons Cream Cheese Chicken from above
Make crepes and Cream Cheese Chicken from above. Place 2 – 3 tablespoons of Cream Cheese Chicken into each crepe. Roll and decorate with Sour cream or Coconut Sour cream or even Guacamole. Add a small piece of cilantro or parsley for decoration and serve.
