Smokey BBQ Meatloaf

My recipe are grain free, refined sugar-free and many are dairy free. I have a slew of autoimmune illnesses. I began my journey to a healthier diet in October of 2017. My journey began by becoming a patient of a functional doctor. The functional doctor put me on supplements and switched up my diet. I didn’t use to have any energy. I was beyond exhausted. It was miserable. Most of my friends were not even aware of how bad my health had gotten. There were even things that I kept from my family. A friend of mine suggested going to a functional medical seminar. So I went with my friend. The seminar resonated with me and I became a patient of the Functional Medical doctor.

I should be doing more Keto. But even if I am not always watching my carbs I am still feeling better and able to do more things than I have for a very long time. My energy is returning and I am feeling healthier than I have in a very long time. Carbs are broken down into two categories one is fiber and the other is sugar. We all need fiber and if you are old like me you need more fiber. There are two thoughts on carbs one is to limit all carbs to 20 or below a day. The other is to limit your sugar carbs.

I hope to bring a little ray of sunshine into your day! My goal is positivity! Perhaps we can share it and it will spread making your day and other’s a little brighter. That is my hope. I hope somehow I can encourage others to spread kindness, laughter and hope. If you have been depressed or are depressed just know I am glad you are here. I hope your tomorrow is brighter. I know life can be hard. My philosophy is that there are two ways to look at life. I try to choose comedy. I try to find comedy in every situation I am in. Believe me it makes for an interesting life and a lot of laughter. This is what works for me.

I used to make meatloaf with a ketchup topping. It was one of my families favorite meals. I don’t know about you but I absolutely adore meatloaf. It really is a comfort meal for me. I didn’t have any ketchup made so I decided to use the Hickory BBQ Sauce I had in the refrigerator. Then I thought about adding some of my BBQ seasonings to the meat mixture. This has a really nice smokey flavor. This is a new family favorite. Serve with Cauliflower Rice, Turnip Mash, Carrot and Turnip Mash, BBQ Sweet Potatoes, or mashed potatoes, and a salad.

1 1/2 lbs hamburger

1/4 cup Hickory BBQ Sauce

1 (5.5 oz) can of V-8 Juice

1 beaten egg

1/2 cup chopped onion

2 teaspoons yellow mustard

1 tablespoon My BBQ Seasoning

*1 cup cheese (optional)

1 cup leftover mashed potatoes or instant potatoes

 

Preheat oven to 400. Grease a meatloaf pan. In a large bowl combine hamburger, hickory BBQ Sauce, V-8, egg, onion, mustard, BBQ Seasoning, cheese and mashed potatoes.

Combine the ingredients with your hands until thoroughly combined. Place meat in the meatloaf pan and press down. Top with topping

Topping

1/2 cup Hickory BBQ Sauce

2 teaspoon mustard

1 tablespoon maple syrup

2 teaspoons coconut sugar

1 teaspoon BBQ Seasoning.

 

Stir together the Hickory BBQ Sauce, mustard, maple syrup and coconut sugar until thoroughly combined.

Hickory BBQ Sauce Topping

Spread the topping on top of the meatloaf. Sprinkle BBQ Seasoning on top of the meatloaf.

Put meatloaf pan on top of a baking sheet and place in the oven and bake for 45 minutes to 1 hour.
