Tex Mex Chicken Salad

My recipes are grain free, refined sugar free and many are dairy free. I am on a new found journey to make a healthier me. I started with a highly restrictive diet and have actually added some items back into my diet, for example, I can now have a limited amount of dairy and some pork. I am under the care of a Functional doctor and along with supplements am seeing improvements not only on my blood tests but with new found energy as well. This is what works for me.

I hope that in some small way my blog can help to inspire positivity in our world. You never know what someone else is going through and how just a smile or kind word can change their day. I wish you a day filled with sunshine, joy, and laughter. So as I begin my school year I hope my blog is a little ray of sunshine. That I in some small way I can lift you up and encourage you. I was craving a chicken salad sandwich but since I am grain free I didn’t feel like making bread I thought a lettuce wrap or lettuce stalk would go well. Then the next step was getting a slightly jalapeno and taco seasoning flavored chicken breast. So I thought why not braise the chicken and then shredded it. Plus this would make the chicken tender and juicy.  This is a slightly spicy Tex Mex flavored chicken salad.

Braising liquid

2 pounds chicken breasts

2 cups water

2 cups chicken broth

1/2 piece of jalapeno

1/8 cup salt

1/8 cup taco seasoning

1/2 teaspoon granulated garlic

1 lime juices and zested

2 tablespoon maple syrup

1/3 cup of cilantro

Place the piece of jalapeno containing seeds inside a muslin bag for easy removal. In a large pot place chicken, water, chicken broth, jalapeno inside muslin bag, salt, taco seasoning, granulated garlic, lime zest, lime juice, maple syrup and cilantro bring to a boil. Boil until chicken is cooked. Shred chicken add 3/4 cup of braising liquid. This chicken has a slight spice to it.


Chicken Salad 

2 lbs shredded chicken

4 tablespoons sour cream

4 tablespoons homemade mayonnaise

1 tablespoon lime juice

1/2 teaspoon finely diced jalapeno

1/2 cup chopped onion

1/4 teaspoon cumin

Romaine lettuce

*optional store bought salsa or Pico De Gallo homemade salsa

*optional extra sour cream

*optional slices of Jalapeno

*optional cilantro

To make the chicken salad add all the ingredients into the shredded chicken and blend until combined. Place the chicken salad on a stalk of Romaine Lettuce or add to bread and have a sandwich.
