My recipes are grain free, refined sugar free and most are dairy free. Are you new to my blog? If so, I switched my diet to improve my health. Has it worked? For me it has. I am feeling better and having returned energy. There was a time I could hardly function. I felt like I was 90. Most of my friends and family were unaware of my condition or how I was truly feeling. I have autoimmune illnesses that are healing at least according to my lab results resulting in my being taken off of medications by my western medical doctor. These are just my own experiences. I am also seeing a functional doctor who put me on this diet and who has also prescribed supplements.
A wonderful friend of mine introduced me to Jalapeno Jelly years ago. She used to make a jar for me every year. But I no longer can have sugar or many pectins. I miss this mildly spicy jam. I thought it would make a wonderful and delightful glaze for chicken. Or double the recipe and use it to make an appetizer by pouring it over 8 oz of cream cheese and serve with Grain Free Garlic Crackers or Sage and Thyme Grain Free Crackers. or use to get a little spicy with your paleo Lemon Poppyseed pancakes or waffles.
1 cup water
1/2 jalapeno seeds and all
4 tablespoons Mouthwatering Orange Marmelade
1/2 cup maple sugar
2 tablespoons Axe Collagen
finely diced jalapeno
Add water and jalapeno to a pot and bring to a boil. Turn it down and simmer for 10 to 15 minutes. Discard jalapeno. Add Mouthwatering Orange Marmelade, maple sugar, and collagen. Cook 20 – 30 minutes or until desired consistency. Remove from heat and allow to cool. If you like add a little finely diced jalapeno. Pour into a sterilized glass container with an airtight lid. Store in the fridge for up to 3 weeks. Use as a glaze for chicken or fish. To use as a glaze reheat and using a pastry brush spread on to your protein.
