Gauc Meatloaf Topping

My recipes are grain free, refined sugar free and many are dairy free. My blog recipes are good for those with allergies or on modified diets to improve autoimmune illnesses. That is why I am revamping my diet. I have found that it is improving my quality of life. I feel like I am finally getting my life back on track. I know that there are no quick ways to restore my health.

Thanks for reading my blog and looking at my recipes. I hope that wherever you may be that you have an incredible day and or night. Perhaps we can inspire a little more positivity in our world. I believe that the vast majority would love to see more positive and inspiring stories about the good in the world. There are positive things happening in every country in the world every day. For example, I heard about two waitresses at a restaurant that found out that it was a 4-year-old deaf patrons birthday. They took it upon themselves to go to YouTube and find out how to sign Happy Birthday in ASL (American Sign Language). No one asked them to. You bet the child was super excited and appreciative. That story made me smile all day. Perhaps it can lift you up too.

I normally add a topping to my meatloaf and I immediately thought about a guacamole topping. My husband was hesitant at first, he wasn’t sure about a cold topping on his meatloaf. After the first bite, he immediately fell in love with the Mexican Smothered Meatloaf and this topping.  I found out that Costco has a Guacamole that I can eat. No sugar or other ingredients that I can no longer eat. Here are the ingredients for Wholly Guacamole: Hass Avocados, Distilled Vinegar, Contains 2% or less of Water, Jalapeño Peppers, Salt. Dehydrated Onion, Granulated Garlic.

Try with Smothered Mexican MeatloafChicken Enchiladas, LC’s Shrimp TacosMexican Steak, Spicy Chicken Chili, Build a Tex-Mex Steak Salad, or use as a dip for vegetables.

I recipe Mexican Smothered

1/2 cup homemade guacamole or store-bought

4 tablespoons sour cream or coconut sour cream

2 teaspoons Cholula

1/2 teaspoon powdered garlic

1/2 teaspoon powdered onion

1/2 teaspoon dill

1/2 teaspoon parsley

1/2 teaspoon chives

1 tablespoon fresh lime juice

 

Place all ingredients into a bowl and stir until thoroughly combined and place in fridge while meatloaf cooks. When meatloaf has cooked take out of the oven and allow to cool. You can top the whole meatloaf or just a slice at a time.  To decorate top each slice with the Guac topping. See picture below
