Mexican Smothered Turkey Meatloaf

My recipes are grain free, refined sugar free and many are dairy free. If you are a regular to my blog then you know I revamped my diet in hopes of restoring my health. I can’t speak for everyone but I can speak for myself and say this has made a huge difference. If you have ever felt beyond tired to the point of exhaustion every day then you know what I’m talking about. If you have not experienced this be glad. I was put on steroids off and on for over a year. I know the road to recovering and reclaiming my health will be a long road. I do know that renewed energy, weight loss and being taken off medications (due to labs and blood work) have made a huge change in my life even if I am still not 100% yet.

I would like to take this opportunity to thank you for reading my blog and your interest in my recipes. Thanks for making me feel special. I hope in some small way I can make you feel special too. We are all on this journey called life together. I truly believe there is more good in the world than bad. To that effect, I hope to inspire other’s to go out and anonymously commit RAK’s. What’s an RAK you ask? Well, its an acronym for Random Acts of Kindness. Sometimes a kind word, a smile, a simple compliment or a hug can change someone’s day. It can be something free or something inexpensive like taping an envelope with a dollar inside with the words random act of kindness written on the envelope and taped to a vending machine, putting change in a parking meter about to expire, putting quarters into a candy machine at the local store. Or simple a little note that says “You are AMAZING! Have a Great Day” taped to a bathroom mirror. To you reading this “I hope you have a wonderful and blessed day or night where ever you may be!”

I sometimes worry that I will run out of ideas on what to make for dinner. I will not lie Mexican or Tex-Mex is one of my favorite cuisines. I had ground turkey taken out of my freezer and wondered how to make this a little different. I had recently made a meatloaf and that got me to thinking why not make a Mexican or Tex-Mex meatloaf. That was all I needed to inspire me. I usually make some type of topping for my meatloaf. I decided to make a Gauc topping and it turned out delicious. Hope you enjoy this recipe as much as my family did.

Use with Guac topping.

(If combining with the Guac topping.  To get a clear picture of Nutritional Facts combine the Nutritional Facts posted on both recipes.

1 lb ground turkey

1 cup chopped onions

1 /2 cup chopped bell peppers

1/8 cup garlic stuffed green olives minced

1/8 cup chicken broth

2 tablespoons tomato paste

2 tablespoons chopped cilantro

2 minced garlic cloves

1 teaspoon salt

1 teaspoon pepper

1 teaspoon cumin

2 teaspoons Cholula


Preheat oven 350. Grease a loaf pan.  Place all the ingredients in a large bowl and mix with your hands until thoroughly combined. Place the meatloaf into a loaf pan. Bake for 1 hour and 15 minutes or until cooked through. Remove from oven allow to cool. Once slightly cool turn meatloaf out and place on serving plate. If you like you can top meatloaf with Guac Topping
