Moroccan Sweet Italian Sausage

My recipes are grain free, refined sugar free and many are dairy free. My life changed in Oct of 2017 when I went to see a Functional Doctor and my diet was revamped. I am also on supplements. At first, I was devasted and was at a loss as to what I could eat. I tried a variety of items that are in beautiful wrappings only to find they tasted worse than dirt. I started doing research and experimenting. Pretty soon I was making delicious and beautiful looking meals. My friends encouraged me to share my recipes. I started this blog thanks to so really great friends.

I am tired of seeing all the negativity on the news. People start believing that the world is a bad place. I know there are bad people. But I believe there is more good in this world. I also believe that we find what we are looking for. I am here to encourage you all to look for the positivity and small ways in which we can encourage each other on this journey called life. I have gotten so used to eating chicken that I had a craving for Sweet Italian Sausage. I went to several markets and could not find sausage I could eat. I finally went to a natural grocery store and found some organic, no nitrate, no sugar sweet Italian sausage.  I was happy. Then the next step was to come up with some kind of dinner idea. Well, I knew it needed some sort of sauce. I started to think about what I had in my fridge that I needed to use up. I still had some Harissa I wanted to use up before it went bad. I had recently bought sun dried tomatoes and thought that would go nicely with the Harissa. I decided to try a little of my homemade Hickory BBQ sauce with it. It needed a little thining out and so I added chicken broth. Viola! The meal was made.

I did put it over oven baked spaghetti squash. YUMMO!! Top with a little fresh shredded parmesan.


2 teaspoons avocado oil

1 lb sweet Italian Sausage

2 cups of chopped onions

1 cup chopped carrots

1/2 cup bell peppers

1 1/2 cup chopped zucchini

1 minced garlic clove

1/4 cup sun dried tomatoes

1 cup chicken broth

2 tablespoons Morracan Harrisa

1 tablespoon hickory BBQ Sauce

1 teaspoon salt

1/2 teaspoon pepper


Heat a frying pan on the stove on medium heat. Add avocado oil to the pan allow it to get hot. Once the pan is hot add chopped onion, bell peppers, carrots, and minced garlic. Stir so that the vegetables don’t burn. Remove the sausage from the casings and break up the meat with a spatula. Add zucchini and continue until the sausage is cooked through. Add remaining ingredients. Stir and serve over spaghetti squash if you like. Top with shredded fresh parmesan if you like.
