Southwest Turkey Meatloaf with Salsa

My recipes are grain free, refined sugar free, and many are dairy free. I can’t speak for everyone but changing my diet has helped to create a healthier me. It has been almost a year since I switched my diet. My family still eats things I can’t. There are so many times where I am tempted. Then I remember how very sick I was. Only my family knows how bad it was. I don’t ever want to go back there. I do still have good days and bad days which I think is normal for everyone. However, the bad days are better than the before my diet changed. If you have autoimmune illnesses you may want to give this dietary lifestyle a try.

I am always trying to figure out what to tell you guys. I love to write recipes but that is the extent of my writing ability.

I truly believe that the world can use a little more positivity. Perhaps if I share positivity with you. Then maybe it will be passed on to someone else. Sometimes one person can make a difference. Maybe not for everyone but for one person. I know that there are days that my attitude can change when someone shares a smile or a kind word. I love quotes that make me think or lift me up. One of my favorite quotes is by Mark Twain the American author who said: “Travel is fatal to prejudice, to bigotry and narrow-mindedness.” I believe when we travel we realize that people are the same all over the world. No matter where you go there are people who are willing to help. If you stop and ask someone for help and they don’t answer please don’t assume they are mean or rude. They might not be from where you are at. They might be in a hurry or they might not speak English. Let’s not make assumptions about each other. Thanks for reading my blog.

I have been making a couple of varieties of meatloaf lately. I don’t know why. I decided to top this one with salsa. Either homemade or store bought.


1 lb turkey

1 cup diced onions

2 minced garlic cloves

1 cup chopped bell peppers

1 4 oz. can mild green chiles

1 1/2 cup homemade black beans or 1 can of black beans

1/2 cup minced fresh green spinach

1/4 cup minced cilantro

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon pepper

2 cups shredded cheese


Preheat oven 350. Grease a loaf pan.  Place all the ingredients in a large bowl and mix with your hands until thoroughly combined. Place the meatloaf into a loaf pan. Bake for 1 hour and 15 minutes or until cooked through. Remove from oven allow to cool. Once slightly cool turn meatloaf out and place on serving plate. To serve cut a slice of meatloaf and top with salsa.
