Gravy for Apple Pinwheel Pork Roast

My recipes are grain free, refined sugar free and many are dairy free. When I first changed my diet to no grains I was at a loss as to what to make and how to make it. I did some research on the internet and found very few recipes that were grain free. I could find gluten free no problem. So I had to do some research and experimentation.

Recently I received a large zucchini and went about writing three recipes for zucchini bread. Not one of the loaves of bread turned out. I had to toss them out. What a disappointment. I hate waste whether it be money, food or anything else. Maybe it’s because I grew up poor. Not every recipe I write is a keeper. It is hard sometimes writing a recipe a day.

This recipe is really easy and quick. It is super yummy with the gravy. The gravy is the juices from the roast.

1 recipe Apple Pinwheel Pork Roast in an oven bag

1/2 cup water

4 tablespoons tapioca flour

Carefully remove the Apple Pinwheel Pork Roast from the oven. Allow the roast to cool for 20 minutes. With oven mitts carefully remove the zip tie from the oven bag and allow the steam to be released. Once the steam is gone carefully remove the roast and pour the drippings and juices into a pan. Place the pan on the stove on medium heat. Combine the water and the tapioca flour until incorporated and becomes a slurry.
