My recipes are grain free, refined sugar free and many are dairy free. Today is exactly a year since I went grain free, refined sugar free and limited dairy. In the beginning I did not have dairy at all. I won’t lie it has been a hard battle. It was harder in the beginning then than it is now. My family eats what I make for breakfast, lunch, and dinner. They do still eat grains and refined sugar. I fast three to four days a month. When I fast my family normally gets take out. It is very tempting to take a bite. But then I remember the roller coaster I was on and how very sick I was. It was awful and I believed I was not long for this world. I want to be here to enjoy life with my family to make memories to last a lifetime.
Life is so much different now. Now I have energy and am off most of my medications. It is not an easy road but for me, but it is the only road as it is going in the right direction to improved health. If you too on the same journey I applaud you for your effort and willpower.
I love humor. My husband and I went clothes shopping today he asked me if I liked a shirt. I asked “Do you like it? It matters more if you like it as one day you will be old and maybe senile and I will dress you.” LOL. At least I thought it was funny enough to share with you guys.
I revamped an old recipe that used to use soy sauce and other items I can no longer have. I think I actually prefer this recipe to my old one. Enjoy
3/4 cup pineapple juice
1/4 cup coconut aminos
1 tablespoon coconut aminos teriyaki sauce
2 tablespoons cumin
1/2 cup fresh squeezed lime juice
1/2 teaspoon smashed coriander seeds
1/2 teaspoon chili powder
1/4 teaspoon powdered jalapeno
1/4 teaspoon paprika
3 cloves minced garlic
4 tablespoons chopped cilantro
Reserve 1/4 cup of marinade. Add all the ingredients together stir until combined. Place marinade into a gallon-size sealable plastic bag.
