Jalapeno, Green Chili Chicken Soup

My recipes are grain free, refined sugar free, and many are dairy free. There are quite of few people like me who have revamped our diets to improve our autoimmune illnesses. Then there are those who have celiac disease and can’t eat grains. Prior to changing my diet, I was on a downward spiral with my health. I only ate one meal a day and was gaining weight. Prior to my change I sometimes would need a nap after taking a shower because I was that exhausted. My labs and blood work have improved. My energy has returned and I have lost weight. This is my story.

I made Zest Jalapeno Chicken for dinner. There were leftovers of about 2 cups of chicken and about 1 1/4 cup of Brussel Sprouts with some pan juices. I put my leftovers in a gallon size sealable plastic bag. I was trying to figure out what to make with the leftover chicken. The day was gray and cold. So I thought why not make a soup out of it. Soup sounded yummy and could sit and cook on the stove for a couple of hours. I chopped up the chicken and then finely diced the Brussel Sprouts. I added a small can of mild green chilies.

This soup is a mild spice. The heat from the green chilies, powdered jalapeno, and chipotle are mild and go well with the lime juice and vegetables. My son who doesn’t care for Brussel Sprouts really loved this soup and liked the flavors.

2 cup leftover Chopped Zesty Jalapeno Chicken

4 oz can mild green chilies

1/4 cup chopped celery

1 cup chopped carrots

1/2 cup chopped onions

8 cups water

1 cup chicken broth

3 teaspoons fresh lime juice

3 tablespoon red wine vinegar

1/4 teaspoon smoked paprika

3/8 teaspoon powdered jalapeno spice

1/8 teaspoon chipotle

2 teaspoons cumin

1 teaspoon salt

1 cloves minced garlic

1/4 teaspoon turmeric

1 teaspoon monk fruit sugar

1/4 teaspoon maple syrup

1 1/4 cup leftover finely chopped Brussel sprouts from (Zesty Jalapeno Chicken) or fresh chopped

 

Make sure leftover Brussel Sprouts are finely chopped. Add all the ingredients in order in a soup pot. Bring to a boil on medium heat. Reduce heat and let simmer for 1 – 2 hours for the flavors to meld. Reduce heat to low and serve.

*If liquid gets reduced too much add up to 2 cups of water the flavor will still be there.

  1. Jalapeno is my kids favorite pepper but it takes a lot of patience to grow them here in Delhi. Good one this, will try 🙂
