My recipes are grain free, refined sugar-free, and many are dairy free. Those of us with allergies or autoimmune illnesses feel better when we follow this diet. We appreciate our families who are also on this side journey with us as it is not always easy to navigate this new world.
I now find it difficult to shop in grocery stores as more than 3/4 of the items in the stores have something I can no longer eat, so there is no need to look at them. I am now an avid label reader. I can’t tell you how many times I read a label that seems like I can enjoy it only to get near the end and be like “nope, I can’t have this one ingredient.” I have to be super vigilant. This means that most times I have to make everything I want to eat from scratch. I have learned to make my own ketchup, chocolate chips, and things like mayonnaise. I have had to relearn how to bake and cook with grain free ingredients. Sometimes it is very frustrating as not every recipe turns out. I waste time, energy, and ingredients.
Use this Italian Seasoning in my Italian Rosemary Chicken
2 teaspoon thyme
2 teaspoon oregano
2 teaspoon basil
1/2 teaspoon garlic powder
1/4 teaspoon marjoram
1/4 teaspoon lemon zest
Combine all in a sterilized glass jar and shake until combined. Use to give dishes an Italian flavor.
