Salted Maple Caramel Sauce

My recipes are grain free, refined sugar free and most are dairy free. Why did I go grain free? To improve my health. My health is improving all the time. I don’t know why it is working but I know it is. I know of others that this is helping. I would love to hear from you if you have switched your diet or if switching your diet has worked for you.

I still want to enjoy the foods I enjoyed before I changed the way I eat. I have been craving a caramel sauce. But how to make caramel with maple syrup? I tried several times before I got it right. What is caramel? It is basically melted sugar brought to a slow boil. I thought that maple sugar would make the best-tasting caramel. I used whipping cream in this recipe but intend to try it again using coconut milk. Sometimes you just feel like you need to splurge. All you want is intense and lip-smacking flavor. This recipe did that for me.

This recipe has inspired me to create more caramel tasting items. I don’t know what they are yet but I am working on it.

Drizzle a little over my Cinnamon Apples, Cinnamon Pears, drizzle on Lemon Poppyseed Pancakes, Grain Free Roasted Strawberry Pancakes, Strawberry Blueberry Waffles, Autumn Harvest Pumpkin Waffles, or switch the caramel sauce in my Caramel Espresso Chocolate Banana Bread, Caramel Espresso Banana Bread French Toast, or over Soft Serve Vanilla Ice Cream, Caramel Pecan Soft Serve Ice Cream, Coffee Ice Cream, Molten Lava Cake.

1/4 cup whipping cream

1/2 cup maple syrup

1/8 – 1/4 teaspoon salt

3/8 cup whipping cream

On Medium heat pour whipping cream into a deep dish pan. Add maple syrup and salt. Heat until boiling 3 -5 minutes. Allow the caramel to change to a darker color. When it does remove from heat. Allow to slightly cool and add remaining whipping cream. Stir until smooth and combined. If it’s still too thick just add 1/8 cup of whipping cream at a time until desired consistency. Makes approximately 1/2  cup.
