Wispy Orange Chicken

My recipes are grain free, refined sugar free and many are dairy free. I have found eating this way has improved my health. My western doctor has taken me off medications due to improved labs and blood work. My recipes are yummy and tasty whether or not you have an autoimmune illness.

What do you make for dinner when you are not feeling well? I have not been feeling well the last couple of days. I wanted a dinner that did not take a lot of time to make and would allow me to put it in the oven and not worry about it. This dinner goes into a covered ovenproof dish. This has a very slight taste or a hint of orange. It is ever so slight flavor and juicy chicken. I was not sure this recipe was going to turn out. I was pleasantly surprised at the flavor and texture of the chicken. Try with Citrus Onion Cauliflower Rice.

I have been praying for years for inspiration and direction of my life as I am on the tail end of my homeschooling journey. I believe this blog and my recipes are God’s answer to my prayers. I feel my recipes are inspired and I often don’t come up with a recipe until about 30 minutes before dinner or as I am making the dinner. I hope that this blog finds you well and happy.

Nutritional Facts are listed below and are based on 1/2 lb per serving.


2 lbs chicken breasts

2 teaspoons salt

1 teaspoon pepper

1 teaspoon garlic powder

1 teaspoon onion powder

2 cups sliced onion

2 tablespoons fresh orange juice

1 teaspoon orange zest

1 orange sliced


Preheat oven to 400. Grease a covered baking dish. Place slices of onion and orange on the bottom of baking dish. Pour in orange juice and orange zest.



Salt, pepper, garlic powder, and onion power both sides of the chicken breast. Top each chicken breast with a thick slice of orange.

Add 1 cup of chicken broth to the pan.

Bake 45 minutes to a 1 hour.

Remove from oven.



Remove chicken and orange slices to a plate. Add juices to a pan.


Juices from the baked Whispy Orange Chicken

1 tablespoon fresh orange juice

1 teaspoon fresh orange zest

1 cup water

1 tablespoon tapioca flour

1/4 cup of water

Add orange juice, orange zest to the pot and then carefully pour in the juices from the Whispy Orange Chicken.

Combine 1 tablespoon tapioca flour and 1/4 cup water and stir together until it makes a slurry. Pour into warm juices and thicken into a gravy. Use to top the chicken with if you want.
