My recipes are grain free, refined sugar-free, and many are dairy free. Dietary changes have brought about changes in my health. Doctors have taken me off of medications due to my blood work and lab results. My health has greatly improved. I still have good and bad days. But for the most part, I am greatly improved. Most days I have energy and am not totally exhausted. I have even been going to the gym. I see a functional doctor and am also on supplements.
I am on the tail end of my homeschooling journey. I have homeschooled my kids from Pre-K thru high school. My youngest has 2 1/2 years left. He attends co-ops, competes in archery, and boy scouts. I teach high school biology to 6 high schoolers. For the next two weeks, we will be working on the cell, mitochondrion etc. Some days I am doing homework and prepping my class. So, sometimes I need a quick idea that is not only healthy but tasty. I often don’t know what I am making until that night. I believe that inspiration comes from above. Sometimes, I take out meat from my freezer the night before and even then I am not always sure what I am going to make.
I needed a side dish to go along with my Wispy Orange Chicken. The chicken has just a slight hint of citrus to it. I decided to give orange juice and orange zest a try in my Cauliflower rice. If you want to make cauliflower rice it is really easy, just put it through a food processor or grate with a box grater and then you can fry it. The cauliflower also has a very mild citrus flavor and therefore is the perfect compliment to the chicken. The complete meal is the Wispy Orange Chicken with gravy and this cauliflower.
1 – 2 tablespoons fresh orange juice
1/2 teaspoon orange zest
4 cups cauliflower rice
1 teaspoon onion powder
1 teaspoon salt
4 tablespoon chopped green onion (both white and green part)
You can shred cauliflower yourself or purchase riced cauliflower. Add orange juice and orange zest to the frying pan.
Place cauliflower rice in a hot frying pan. Add remaining ingredients to the cauliflower rice and stir until combined. Cook on medium heat until the cauliflower is thoroughly cooked through.
Top with more green onions and serve
Serve with Wispy Orange Chicken.
