Today at my son’s archery class he shot a 250 score. He loves archery. Several years ago my son was in line to get the first place in a JOAD Archery Tournament. First place was a new bow. I informed him of his place and he was sad. He informed me that he was hoping to get second place as second place was a huge trophy. His sister had several speech and debate trophies. The second place JOAD trophy was huge. He said, “It was taller than all of his sister’s trophies put together.” He did take second and soon informed his sister that his trophy was bigger than all of hers. These are the moments that I find amusing. My husband and I both laughed at this. I am a proud mom of both my kids. They are amazing, funny, smart and talented. I am blessed to have them in my life. They always make me feel like a superstar.
I am currently on the tail end of my homeschooling journey. I only have a few years left before my son graduates high school. It has been an incredible journey. I am so blessed to have had the opportunity to homeschool my kids. Homeschooling is just one of many choices. Everyone has the right to make the best educational choice that fits their family best.
I recently made a Southern Chicken Fried Pork Chops and wanted a gravy to go with it. This gravy is good with mashed potatoes, mashed cauliflower or Chicken Fried Steak or Chicken Fried Chicken. These dishes are southern favorites. The best chicken fried steak I have ever had was in Florida.
2 cups beef broth
1 cup milk
1/4 teaspoon salt
1 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1 teaspoon Savory Chicken Rub Spice
1 tablespoon tapioca flour
1/4 cup milk
Carefully pour beef broth into the hot pan that you fried up the Southern Chicken Fried Pork Chops. Once the liquid is hot pour in milk and stir together. Add spices and stir until thoroughly combined. In a small bowl combine tapioca and milk to make a slurry pour slurry into the broth, milk, and spices stir until thickened. Use gravy over Southern Chicken Fried Pork Chops, mashed potatoes, cauliflower mash, Turnip Mash or Carrots and Turnip Mash. Or you could use this as a dipping sauce for Popcorn Chicken, Chicken Strips, Coconut Shrimp.
