Chicken or Turkey Pot Pie

My recipes are grain free, refined sugar free and many are dairy free.

I am thankful that I can write my blog an stick it in queue to be posted on a specific date. How nice it is that because of this I can sit back and relax on Thanksgiving day and the day after. It will be nice to relax a little and then start prepping for Santa Lucia and Christmas. Santa Lucia is the next holiday we will celebrate in our house. I will write a little more about this Scandinavian holiday as we get closer to the date of December 13. I have holiday recipes that I can’t wait to make.

I am hoping that all my readers got to have Thanksgiving with family and friends. That you are all doing well and enjoying some family time. I do want to reach out to any going through a rough time this holiday season as it is the most difficult time of year for many. I have a brother who has suffered from depression for many years. Thanksgiving is now over for another year. Are you looking for what to do with all those leftovers? Well, look no further. Chicken or Turkey pot pie is a comfort food. Full of wonderful vegetables and fresh herbs. If buying chicken or turkey broth just check the ingredient list. Top with Pie Crust: Grain Free, Dairy Free or Savory Pie Crust.

1 tablespoon avocado oil

1/2 cup chopped onion

1/2 cup chopped sugar snap peas

1 cup chopped celery

1 1/2 cup chopped carrots

1 cup broccoli

1/2 teaspoon sage

3/4 teaspoon salt

1/2 teaspoon pepper

1/4 teaspoon rosemary

1/4 teaspoon marjoram

2 tablespoons fresh parsley

1/4 teaspoon savory

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

3 cups chicken or turkey broth

5 tablespoons tapioca flour

10 tablespoons chicken or turkey broth


In a large pan heat up the avocado oil. When hot fry up chicken and onions until almost cooked.

Add the vegetables, sage, salt, pepper, rosemary, marjoram, parsley, savory, garlic powder, and onion powder. Cook until the carrots can be pricked with a fork.

Add chicken or turkey broth and cook until it comes to a boil.

Combine broth and tapioca flour stir until it becomes a thin slurry. Pour slurry into the Chicken and vegetables and stir until the sauce thickens.

Pour inside a greased pie pan. Top with Savory Pie Crust.
