Information On Yacon Syrup
Through research, I recently found Yacon syrup from Peru. It is a sweetener and experts feel that it improves digestion and immunity. After doing some research and talking to a Functional doctor I decided to purchase some and try using it. Therefore I decided to use it in this recipe. I have not looked for this in my local grocery stores as of yet. It can be purchased online. If you are curious about Yacon click on this. This is only one article about the syrup I highly suggest you do your own research to see if this is something you want to add to your diet. Since I had some Yacon syrup in my pantry I decided to add this to my Chocolate Pecan No-Bake Cookie.
This recipe was inspired by the chocolate peanut butter no bake cookies that were popular in the 1970s. Therefore, I wanted to write a retro recipe that would be a throwback to my childhood and days gone by that I could eat and make quickly. My personal diet does not contain peanuts of any kind. Oatmeal is considered a grain and therefore I did not add this ingredient in my recipe. What on earth was I going to use to substitute for the oats? So I added some chopped pecans and cacao nibs to give the cookie texture and flavor. If you want to reduce the calories reduce the chopped pecan nuts. The fact that I had pecan nut butter and pecans in my pantry inspired an idea. Made me think why not make a cookie with these?
I made these for my son’s friends. They are all teenage boys who love chocolate. Furthermore, not only did they like the cookies they ended up eating them all. They all gave this Chocolate Pecan No-Bake Cookie their stamp of approval and said they were definitely something I should put on my blog. I just need to take a moment to brag not only about my son but about his friends. They are amazing teenagers that are always kind, polite and respectful. I am so glad that I get to know these boys and can’t wait to see what they accomplish in their lives. There will always be teenagers that adults complain about but there will also be those cool and amazing teenagers.
These Chocolate Pecan No-Bake Cookies have several textures and are so chocolatey. My favorite texture bites are the Cacao Nibs and the chopped pecans as well as the different seeds. 4 egg whites
1/4 tsp cream of tartar
2 tbsp Yacon Syrup see notes above
1/2 cup melted coconut oil
1/2 cup monk fruit sweetener
2 tbsp Yacon Syrup
1 tsp Vanilla
4 tbsp dark cocoa powder
1/2 cup pecan butter (freshly made or store bought)
1/2 cup chia seeds
1/2 cup hemp seeds
3/4 cup chopped pecans
1/2 cup flax seed meal
1/2 cup hemp seeds
1/2 cup cacao nibs
Beat egg whites until foamy.
Additionally, add in cream of tartar and Maple sugar to egg whites.
Beat egg whites until stiff peaks set aside.
- In a double boiler over medium heat add coconut oil,
additionally, add monk fruit sugar, as well as the Yacon syrup
Add in Vanilla
Cook until sugar is dissolved and oil is melted
Add dark Cacoa and remove from heat
First, stir in the Pecan butter until well blended.
Second, stir in Chia seeds, Thirdly, add in Chopped Pecans
Fourthly, stir in flaxseed meal
Fifthly, in hemp seeds
Sixthly, stir in Cacao Nibs
Continuously stirring until all additions are combined.
Lastly, fold in egg whites until completely combined.
Using a cookie scoop scoop out cookies onto parchment paper on cookie sheets makes approximately 20 cookies.
Place in fridge until solidified 30 minutes or so. Store in the fridge in an airtight container.

- 1/2 cup cocoa nibs
