My house is in the process of getting decorated. Our house is always decorated with Swedish Candelabras with their streaming white light, straw ornaments from Sweden, and American ornaments Why straw? Straw ornaments are to remind us of Christ’s birth in the manger. The ornaments are often stars, angels or goats. The straw ornaments remind me to remember the Angels and news they shared.
The goat has long been a symbol of Christmas (Jul) in Sweden. It reminds us that the manager had animals. There are several legends about the straw goat. I could not find mention of the legends that I have been told by my “mormor” (mother’s mother- grandmother) and mother. They told me the legends incorporated both Christian symbolism and pagan symbolism. Since I could not find other mentions of the legends I was told, I did not share them here. The Swedish Christmas Goat is made of straw and wrapped in red cloth ribbon. Red is a symbol of love and the death of Jesus Christ. Every year in Gävle, Sweden a huge straw goat is erected. It is either stolen or set on fire. It has been erected every year at the beginning of advent in the town square since 1966.
I am always looking for new ways to make chicken. I looked at my seasonings that I have created. I saw my Taco Seasoning and thought why not a Taco flavored fried chicken. That sounded yummy and that’s what I did. I love the spicey flavor and the crispy texture of the skin. I am making myself hungry just writing the description.
8 chicken thigh
2 – 3 teaspoon taco seasoning
1/8 teaspoon Powdered Jalapeno
salt and pepper to taste
Season each chicken thigh with chicken seasoning, salt, and pepper to taste. Place chicken thighs skin side down in a large frying pan. No need to add any oil to the pan as there is plenty of oil in the skin. Once the skin is cooked and crisp turn over and cook another 10 -15 minutes or until chicken is cooked through. Remove and eat or top with a Tex Mex cheesy sauce.
