Chicken Cabbage Radish soup is full of tastiness as well as tons of vitamins and will warm you up on cold winter days. Surprisingly, this recipe uses radishes to add a new and different flavorful dimension to this soup. Radishes mellow when they are roasted or cooked in liquids while still having a crunchy texture. Most days I am trying to incorporate a variety of vegetables into my families meals. Not that long ago I couldn’t stand Brussel Sprouts and neither could my family, until one day I decided to try them again at a restaurant. The Brussel sprouts were roasted with a little balsamic and all of a sudden I was in love. Since then my family and I tend to eat a lot of Brussel sprouts.
Cabbage and Brussel sprouts have a common flavor and enhance one another. One of the most appealing things about this soup is that it can be made in the slow cooker or on a pot on the stove. The second most appealing thing is that you can add frozen chicken breast to this and simply remove when cooked through and shred with two forks.
Notes:
Balsamic vinegar, fennel seeds, and caraway seeds enhance this soup with flavor and texture. This soup will become a new family favorite while adding more vegetables to your diet.
In fact, I use Lano Life Chicken Bone Broth Powder in this clear broth soup. Often times we have soup, salad, and biscuits for dinner. My Grain-Free Cheese Biscuits are a wonderful addition to go with this soup.
Super easy and quick to make, just add all ingredients to a pot, bring to a boil, reduce, and simmer for 1 or more hours to allow flavors to meld. Then, simply remove the chicken and use two forks to shred the chicken. Once shredded return to the soup and serve.
