Marinated Chimichurri Chicken is a herbaceous and tasty bbq grilled chicken. A beautiful vibrant, fresh herbaceous, garlic, and vinegar flavored sauce. Indeed, it is one of the best condiments for any meat. By the way, I created this recipe years ago to go with some leftover Chimichurri sauce. Consequently, this recipe is marinated with homemade Chimichurri sauce and imparts fresh parsley and herb flavor combined with the smokiness from the grill. In conclusion, this grilled chicken is going to be a new summer favorite at your house.
Marinated Chimichurri Chicken:
Needless to say, if you have never had Chimichurri sauce you are in for a treat. Chimichurri Sauce is made from fresh parsley, red onions, red chili, balsamic vinegar, and oil. Once I had this sauce in Disneyland years ago, I was addicted. It is so good. Incidentally, I make mine with watercress, parsley, lemon juice, and lemon zest. Therefore, it has a tangy, zippy, fresh flavor. Either way, this sauce is a versatile, vibrant, and tasty sauce. In conclusion, I use my Avocado Oil Chimichurri Sauce for a marinade, topping, and dip.
All in all, I love to make new and unique dishes from all over the globe. In all honesty, this dish is the perfect dish to make at any campout or to bring to a church potluck or picnic. A versatile recipe that can be BBQ’d or cooked on the stove.

Marinated Chimichurri Chicken:
Ingredients:
- 4 chicken breasts
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp salt
- 1/2 tsp black pepper
- 8 tsp avocado oil chimichurri sauce
Directions:
First, preheat the BBQ. Secondly, in a small bowl stir together the spices. Thirdly, cut the chicken breasts into thinner pieces. Next, sprinkle the spices over both sides of the chicken pieces. Finally, spread a 1/2 tsp of Chimichurri sauce over both sides of the chicken pieces. Marinate the chicken for 10- 20 minutes. Transfer to the grill. Lastly, cook approximately 2-4 minutes per side. or until done. Serve with more Chimichurri sauce.
