Dairy-Free Coffee No-Bake Bites are luscious little creamy and heavenly morsels with a nice coffee flavor. They have a slight textural component from the nut flours. Nevertheless, if love the flavor of coffee then this dessert is for you. These little desserts are the perfect little bite to serve when you have company. Just remove from the freezer 5- 10 minutes before serving. Not to mention, for an even more perfect dessert top with Refined Sugar-Free Mocha Frosting. Perfect for spring and summertime as they are cool and refreshing.
The only kitchen appliance you will need is a food processor and a freezer. Who doesn’t like dessert? It’s even better when you don’t have to spend a lot of time in the kitchen. These bites have a little crunch and texture from the cacao nibs and the figs which are a nice surprise.
Dairy-Free Coffee No-Bake Bites have a wonderful creamy texture from the unsweetened full-fat canned coconut milk. Hence, this dessert is also dairy-free but believe it or not they are refined sugar-free as well.
Gluten-Free Coffee No-Bake Bites Notes:
As a Scandinavian one of my favorite flavors is coffee or mocha. Hence, my son’s favorite flavored ice cream is coffee. Just about any coffee-flavored dessert is going to be among my favorites. Coffee No-Bake Bites are the perfect pick me up and pair extremely well with coffee.
I recently came up with this recipe as I am on a summer shred program with my daughter and every once in a while I want a small sweet bite. These little mini bites are a perfect pick me up with enough sweetness to curb my sweet tooth.
In the event you either don’t have mini cheesecake pans or would like to purchase them here is a link. Cacao is actually a seed pod and a part of the cocoa beans before being it is made into chocolate and is, therefore, less processed. Nonetheless, Cacao nibs have a slight chocolate flavor and a nice crunch when you bite into it. Giving a nice bit of texture to anything you add it to. Not to mention that Coffee No-Bake Bites are low in carbohydrates and calories. Making them a great KETO dessert or snack. Amazon also carries dried figs, almond flour, canned unsweetened coconut milk, instant espresso, instant coffee, hazelnut flour, maple syrup, coconut oil, and Food Processor.
Nevertheless, it pairs nicely with Refined-Sugar Free Mocha Frosting.
Roasting Flour Notes:
If you can’t find roasted almond or hazelnut flour you can roast the flours themselves. Roasting adds another deep layer of flavor, to these No-Bake Coffee Bites. However, if you choose not to roast it you can still make this recipe.
Preheat oven to 325. Then pour the flours onto a long sheet pan roast for 10 minutes or so. Remove from oven and stir continue roasting for another 5 to 10 minutes. Remove and allow the flours to cool before continuing with this recipe.
Dairy-Free Coffee No-Bake Bites
Crust Ingredients:
- 10 dried figs
- 1 cup of boiling water
- 10 dried figs
- 1 cup almond flour
- 2 tbsp cacao nibs
Directions:
Being by soaking the dried figs in the boiling water for 15 minutes.
After 15 minutes drain the water from the figs. Remove the top nubby stem from the figs. Place almond flour, soaked figs, and cacao nibs into a food processor.
Process until thoroughly combined. Next, scoop out about a 1/2 tbsp to place in mini cheesecake pan with removable bottoms or mini muffin tins with mini muffin wrappers.
Using your fingers or a mini tart shaper press the 1/2 tbsp of crust into the bottom of the pans or tins.
Coffee Filling Ingredients:
- 2 cups coconut milk (approximately 1 can + 1/4 cup)
- 1 tbsp espresso
- 3 tbsp instant coffee
- 3 cup roasted almond flour
- 1 cup roasted hazelnut flour
- 1/4 cup maple syrup (if you like sweeter 1/3 cup)
- 2 tbsp melted coconut oil
Directions For Coffee No-Bake Bites:
Combine the coconut milk, espresso, instant coffee, stir until well combined and set aside.Place almond flour, hazelnut flour in a food processor and process until a thick mass is created. Pour in maple syrup, coconut milk, and melted sugar and continue to process until thoroughly combined.
Pour batter into the mini cheesecake tin or mini muffin tins and fill to the top.
Makes approximately 24 mini Dairy-Free Coffee No-Bake Bites. Then simply place into your freezer for a minimum of 2 hours. After 2 hours remove your tins. If using the mini cheesecake pan simply push your bite out of the pan from the bottom. If using a mini muffin tin simply remove the paper wrappers from the tin.
Serve or store in a freezer-safe container with a tight-fitting lid.
Can be served with a quick and easy nut flour chocolate frosting.
