Refined Sugar-Free Gingerbread Sweets are a wonderful little candy full of gingerbread flavor. These tasty little candies may remind you of your grandmother’s kitchen.
I will be working on making crackers so that I can enjoy some dips and meats and cheeses with them over the holidays.
What is it about the holidays that make us sentimental? Is it the same classic songs, decorations or the smells that remind us of days of yore. Needless to say, our senses can bring back memories of our childhood or from times when our children were small. Not to mention, the smell of bread baking to make homemade croutons for Thanksgiving stuffing or Christmas music playing in the background and the sight of the freshly fallen snow can awake a nostalgic memory. Thereby making each year we get to spend with family and friends a blessing. Not to mention the memories we make every year. Needless to say, time is a wonderful treasure. More importantly, every day, week, year or holiday we get to spend with family and friends is a blessing worth more than gold.
Personal Information:
This year I am creating a lot more recipes and am feeling more comfortable with writing recipes with my dietary restrictions. In all honesty, I have been thinking about all the holiday treats and cookies I used to make. In fact, that started me thinking about vintage candies, cakes, and cookies that my family used to receive as gifts during the holidays.
One of my favorite Christmas cookies is Swedish Pepperkaka cookies many Americans would call them a gingerbread cookie. Therefore, I decided to create a no make sweet or cookie with the Swedish Pepperkaka taste in mind. This is the recipe that I came up with. Can you believe this recipe is KETO? as long as you don’t eat too many.
Thoughts:
Let us not forget, however, that for many people the holidays are hard more than difficult of mourning and perhaps even a time of depression. Perhaps, we can all try to be a little kinder. We never know what someone else is going through. Perhaps they are angry that a loved one is dying, or their child is sick and in the hospital. Since we don’t know what others are going through maybe we can allow everyone a little extra leeway.
I know when I experience insomnia I ask my family for extra leeway. In conclusion, maybe we can all commit small random acts of kindness also know as RAK’s. Some ideas are putting quarters into a parking meter for a meter about to expire. Putting quarters into candy machines at the grocery. Or perhaps even handing out store-bought candy canes to everyone you pass. Sometimes just a smile or a hug is all that is needed.

Refined Sugar-Free Gingerbread Sweets
1/2 cup coconut oil
1/4 cup monk fruit sweetener
1/2 teaspoon cinnamon
1/8 teaspoon cloves
1/4 teaspoon ginger
1/4 teaspoon cardamom
1 3/4 cup almond flour
1/2 cup flax seed meal
1/2 cup shredded desiccated coconut
Directions:
First, lace coconut oil into a kitchen aide and blend until smooth and soft. Using a spatulas scrape down the sides. Once it is blended until soft add monk fruit sweetener. Add spices (cinnamon, clove, ginger, and cardamom) to the coconut oil mixture.
Next blend in the almond flour and flax seeds. Using a spatulas scrape down the sides.
Once well blended take a small amount and roll into a ball. Pour a small amount of the shredded coconut onto a plate roll each ball around in the coconut. Place the Gingerbread sweets in the fridge for 3-4 hours to harden slightly. Remove to serve. If there are any leftovers return to the fridge.

- 1/4 tsp cardamom

Instructions

- Once well blended take a small amount and roll into a ball.
- Pour a small amount of the shredded coconut onto a plate roll each ball around in the coconut.
- Place the Gingerbread sweets in the fridge for 3- 4 hours.
- Remove from the fridge and serve.
- Return to the fridge to harden if they get to soft.
