Needless to say, it is a delightful soup with hickory flavor is the perfect lunch or dinner.
Wintertime is often a time for soups and stews. Incredibly these foods are often considered comfort foods. After all most stew have potatoes in them but since I am on a summer shred I am trying to write more recipes without them.

Unbelievably I am still suffering from insomnia. I am having a hard time sleeping more than three hours a night. In all honesty, I don’t know what I am going to do as it is harder to get inspired. I know that all aspects of my life are being affected not to mention lack of energy to even try to attempt to go to the gym. Gluten-Free Beef Stew
Ingredients:
- 2 lbs beef stew meat
- 1 1/2 cup chopped onions
- 2 tsp avocado oil
- 2 tsp pink salt
- 1 tsp black pepper
- 1 1/2 cups chopped carrots
- 1 1/2 cups chopped parsnips
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp powdered beef bone broth
- 1 (15 oz) can tomato sauce
- 1 (15 oz) pinto beans
- 4 tbsp balsamic vinegar
- 2 tbsp red wine or water
- 1/2 tsp liquid smoke hickory flavor
Directions:
First, cut stew meat into bite-size pieces. Second, roughly chop the onion. Add avocado oil to a pan. Once the pan is hot add meat, onions, salt, and pepper to the pan.While the beef is cooking add carrots and parsnips to the beef. Finally add pinto beans, tomato sauce, onion powder, garlic powder, and powdered beef bone broth to a high powdered blender and process until smooth.Remove the bean sauce from the heat and pour over the cooked beef.Lastly, add in balsamic vinegar, red wine, and hickory liquid smoke. Cook until warm. In the event, it gets too thick add a little liquid beef broth.
