Keto Buffalo Meatloaf will have you salivating as soon as it comes out of the oven. If you have not had buffalo meat then you are in for a treat. Spoiler alert Bison is higher in iron, protein, selenium (which reduces inflammation), zinc, and lower in fat than beef according to the USDA.
Bison has long been a favorite of mine since I was a kid in high school. My graduating class went on a field trip to a local Indian Reservation where we had lunch with the tribal leaders. Incredibly we were served buffalo stew. What an extraordinary experience that has helped to shape who I am today.
Incidentally, most Buffalo meat is grass fed and I have found it locally at Costco and a local butcher. Buffalo has a rich sweet flavor and has less fat than beef. Buffalo, by the way, is allowed on the Paleo and keto diet. In conclusion, buffalo meat is a better protein choice with a richer deeper flavor.
Keto Meatloaf is full of flavor, therefore, it doesn’t need a lot of flavor enhancement.
Notes:
Leeks are a mild onion but often hide small particles of dirt inside. At any rate, the leeks should be cut in half and rinsed out before chopping or frying them up. Top the meatloaf with the reserved leeks thus sealing in moisture and the juices. In all honesty, I used leeks as native Americans often used wild onions in their dishes as leeks look and taste similar to wild onions.
Actually, Lano Life powdered bone broth has become my favorite. In the event, you can’t find it locally you could order it online here. I highly suggest doing your own research to find out if it is something you would like to add to your diet.

Ingredients:
- 3 cups chopped leeks
- 2 cups chopped onions
- 2.5 lbs ground buffalo
- 2 tsp oil
- 2 tbsp beef bone broth powder
- 1/4 beef broth liquid
- 2 eggs
- 2 tsp salt
- 1 tsp granulated onion
- 1 tbsp onion powder
- 5 tbsp balsamic
- 2 tbsp chopped onion
- 1/4 tsp paprika

Keto Buffalo Meatloaf
Ingredients
- 3 cups chopped leeks
- 2 cups chopped onions
- 2.5 lbs ground buffalo
- 2 tsp avocado oil
- 2 tbsp powdered beef bone broth
- 1/4 cup liquid beef broth
- 2 whole eggs
- 2 tsp salt
- 1 tsp granulated onion
- 1 tbsp onion powder
- 5 tbsp balsamic vinegar
- 1/4 tsp paprika
Instructions
- Preheat 375 F.
- Slice leeks in half and rinse off.
- First, chop up the leeks and onions.
- Second, fry up the chopped leeks and onions with the two teaspoons of avocado oil until they are caramelized.
- Next, allow leeks and onions to cool.
- Reserve one cup of caramelized leeks and onions for the top.
- Once leeks are cooled add to the ground buffalo meat.
- Finally using your hands mix the meat, seasonings, and leeks and onions until thoroughly combined.
- Place into a lightly greased (as buffalo is extremely lean and has little fat) 5x 9-inch loaf pan.
- Lastly, top the meatloaf with the reserved one cup of caramelized leeks and onions.
- Bake 1 hour 30 minutes. Remove from oven and allow to cool 15 minutes and serve.
Serving Suggestions: Serve with Cauliflower Mash
