I am always trying to come up with new and improved recipes. I wanted to have a slightly spicy marinade. I had some jalapeno’s that I purchased from the local farmers market. I started with the jalapeno and the idea of lime and lime zest. Then the rest just seemed to almost appear in my head as if the recipe was already written down. I get inspired with bits and pieces and then it all comes together.

My mother is from Sweden and Swedish cuisine is very mild. But I do love mild heat. So if you really like a lot of heat use a whole jalapeno with seeds and all. Try with Tex Mex Jalapeno Orange Glazed Chicken. The sweet and spicy chicken is yummy.
Lime Jalapeno Marinade
Ingredients:
- 2 cups of water
- 1/4 piece of jalapeno
- 1/4 cup salt
- 1/8 cup taco seasoning
- 1/2 teaspoon granulated garlic
- 1 lime juices and zested
- 1 tablespoon maple syrup
- A nice amount of cilantro (1/3 cup)
- 2 – 4 lbs of meat I used Leg Quarters
Directions:
Place cold water into a medium size pot. Cut 1/4 piece of jalapenos off. I like to use a piece with seeds. If you want it hotter put in a half piece and make sure the seeds are not attached to your jalapeno add the remaining ingredients. Bring it to a boil. Reduce heat and let cook 5 – 10 minutes. Remove jalapeno piece unless you want it hot. Allow to cool. Pour into a sealable plastic bag add your meat to the bag and place in the fridge for 2 hours. After 2 hours take the meat and marinade out of the fridge and flip the bag over so that the meat sits in the marinade and is seasoned evenly.
