If you are anything like me you would rather spend time with your family rather than making dinner. Incredibly One Pot Pork Chops also uses up leftover beef gravy to create a whole other meal with a totally different taste.
I am always trying to figure out new ways to use leftovers and create a new dish for that reason I decided to season these pork chops with leftover gravy. Normally I use leftover gravy to start soups or use as a soup stock as it packs a punch of flavor to whatever soup you use it for.

This meal is so quick and easy. Just add salt and pepper your pork chops to your liking, place vegetables of your choice in the bottom of the pan top with gravy and place inside the oven to cook slowly. This One Dish Pork Chop is tender and tasty. If you are on a keto diet add other vegetables than carrots and potatoes. I personally didn’t eat the carrots or potatoes and ate my pork chops with my pickled beets and bread and butter pickles with a nice large salad. There is plenty of ways to make this meal work for your family.
The pork chops are tender and absorb the flavor from the gravy. If you ever have leftover Prime Rib gravy it is even better as the pork will taste a little like Prime Rib. As I don’t know what gravy you will use or the ingredients you would need to figure that part out. Can be eaten with Cauliflower Rice Pilaf, Mustard Caraway Fried Cabbage, or another side dish.
One Dish Pork Chop
Ingredients:
- 2 lbs thick cut pork chops
- 3 cup baby potatoes
- 5 cup carrots
- 2 cups leftover Gravy (from beef)
- salt and pepper to taste
Directions
Oil a covered dish baker. Preheat oven to 350. Place potatoes and carrots on the bottom of the baker. Salt and pepper both sides of the pork chops. Pour the leftover gravy over the pork chops and vegetables cover and bake 1 1/2 hours. Remove and allow to cool.
