A wonderful friend of mine introduced me to Jalapeno Jelly years ago. She used to make a jar for me every year. But I no longer can have sugar or many pectins. I miss this mildly spicy jam. I thought it would make a wonderful and delightful glaze for chicken. Or double the recipe and use it to make an appetizer by pouring it over 8 oz of cream cheese and serve with Grain Free Garlic Crackers or Sage and Thyme Grain Free Crackers. or use to get a little spicy with your paleo Lemon Poppyseed pancakes or waffles.
Orange Jalapeno Marmalade Glaze
1 cup water
1/2 jalapeno seeds and all
4 tablespoons Mouthwatering Orange Marmelade
1/2 cup maple sugar
2 tablespoons Axe Collagen
finely diced jalapeno
Add water and jalapeno to a pot and bring to a boil. Turn it down and simmer for 10 to 15 minutes. Discard jalapeno. Add Mouthwatering Orange Marmelade, maple sugar, and collagen. Cook 20 – 30 minutes or until desired consistency. Remove from heat and allow to cool. If you like add a little finely diced jalapeno. Pour into a sterilized glass container with an airtight lid. Store in the fridge for up to 3 weeks. Use as a glaze for chicken or fish. To use as a glaze reheat and using a pastry brush spread on to your protein.
