I don’t know about you but I adore chocolate. Who am I kidding? I love chocolate. However, it is really hard to find refined sugar-free chocolates. In fact, if you want more information about Yacon Syrup please read my blog post about it. I created this recipe to add a little more chocolate to my Gluten-Free Vegan Chocolate Waffles. I don’t tend to add a lot of syrup to my waffles so this was a nice treat. Two tablespoons were more than enough for a waffle. The Chocolate Drizzle will send the Gluten-Free Vegan Chocolate Waffles over the edge giving it just a little more flavor and chocolate.
If you read my blog regularly then you know I have been suffering from a long bout of insomnia. I am still having trouble sleeping. Therefore I hope my blog and recipes make sense and don’t have any technological errors. Incredibly I have tried a ton of things such as Lavender, Ashwagandha, Melatonin, MCT oil warm milk, etc. I have gone to the gym and worked out in hopes that I would go home and fall asleep. I am worried about taking a nap as I don’t want to perpetuate the cycle. I am at my wit’s end. Most days it is ok as I am just exhausted but someday I feel as if I can’t function. In any case, I would appreciate prayers for a good nights sleep.

Refined Sugar-Free Chocolate Drizzle
2 oz unsweetened chocolate
3 tbsp Yacon Syrup
1/2 cup coconut milk
With a knife cut the chocolate into bits and place in a microwaveable bowl. Microwave on high for 30 – 1 minute. Remove and stir with a spoon. If not melted place back into the microwave at 30-second intervals removing it and stirring until melted. Add yacon syrup a little at a time stirring after each addition. Lastly, pour coconut milk a small amount at a time into the chocolate stirring after each addition. If the chocolate should begin to seize return to microwave for 30 seconds at a time removing and stirring until it is a thin consistency and all the syrup and coconut milk have been added in.
