Sunday Roasted Chicken Dinner is moist, tender, and juicy. The aroma it emits will have you in heaven.
People all around the world often eat roasted chicken on Sunday nights. It has long been a favorite in many households. I am always looking for a new and unique way to flavor my chicken. My favorite way to cook a whole chicken is in an oven bag as I can season my chicken place it in the bag seal it and not worry about it until it’s time to pull it out of the oven, which, also makes it easy to clean up.
In short chicken and citrus often paired together as it brings the chicken to new heights. Dipping the lemon slices into pink salt then placing a little bit fresh herbs on them finally placing them salt down onto the chicken. This allows the flavors of all of the ingredients to drip into the meat and brings about a succulent chicken.
Notes:
In any event, using an oven cooking bag is one of my favorite ways to cook chicken because it is a triple threat. Triple meaning that it cooks quicker, maintains moisture and makes for easy cleanup. Fresh herbs in this recipe is an absolute must. In any event, if you like the flavor of tarragon and dill then this is the correct chicken recipe for you.
Sunday Roasted Chicken Dinner goes well with Citrus Onion Cauliflower Rice and brings out the citrus flavors in both.
Sunday Roasted Chicken Dinner
Ingredients:
- 1 5 lb whole chicken
- 8 slices (about two lemons)
- 2 tsp salt
- Springs of dill and tarragon fresh
- 1/2 cup Chicken broth
- 1 whole garlic head (all cloves peeled)
- 1/4 cup parsley
Preheat oven to 325. Dip one side of the lemon slices in salt place a small piece of a sprig of dill and a small piece of a sprig or tarragon on each lemon slice.
Next lay lemon slices under the skin with the salt and herb side placed down on the chicken.
Stuff chicken with any leftover lemon, garlic, and parsley inside the chicken.
Bake 1 hr. 20 minutes.
Notes for removing chicken from the bag:
Remove chicken from oven. Using a pair of scissors I cut a hole in one of the corners (being extra cautious as there will be extremely hot steam coming out. Therefore, make sure to do this with very thick oven mitts on.) Finally, pour out any of the hot juices from the bag into a pan. Incidentally, these juices can be used for gravy. Once you have removed the hot liquids then cut a bigger hole in the bag and spray coconut oil over the skin. Place back into the oven and allow the skin to crisp. Once the skin is crisp remove from the oven and allow the chicken to cool slightly before moving to a serving platter
